Jianshui Noodles are also known as 'Yellow Noodles' or 'Alkaline Noodles'. These Jianshui 'Wenzhou-style' noodles are like fresh Sichuan noodles once cooked and differ to most Chinese dried wheat noodles due to the added secret ingredient 'Jianshui' or 'Kansui' which is an alkaline lye water.

Lye water is added to give Jianshui noodles the famous body and bounce and it also gives them an appetising yellow colour.

These Jianshui noodles are named after the city of Wenzhou where they originated and were made with naturally occurring 'Kansui' from the lake water. And they have now become popular throughout China and Japan.

Preparation:

  • cook noodles for 4 mins in boiling water.
  • flush the noodles and drain
  • they are now ready to add to your cooking.

Ingredients: wheat flour, salt, e500i.
