Stew Base Mix [Kare Kare]

50g by Mama Sitas. A popular Filipino stew mix, just add Peanut Butter!

This is basically traditional Kare-Kare minus the peanuts, giving it the flexibility of adding the desired amount of peanuts or peanut butter.

Recipe:
Kare Kare Stew Base [makes 8-10 servings]

You will need:

1 x stew base mix, 1kg meat on the bone or oxtail, 10 cups water, 200g long green beans, 200g eggplant, 130g peanut butter, 200g bok choy, salt to taste, shrimp paste sauteed.

• 1] boil oxtail in water, lower the heat and simmer until meat is very tender, adding water as required leaving around 3 cups of broth.
• 2] increase the heat, add eggplant and green beans, cook for 2 mins.
• 3] in a bowl combine stew base mix, peanut butter and 1 cup of broth. Mix till smooth.
• 4] add the mixture to simmering oxtail and cook until sauce thickens. Add bok choy and cook 3 mins, add salt to taste.

Serve hot with rice and sauteed shrimp paste [bagoong]
