Ripe pungent chillies soaked in tangy curd, salted and sun dried to produce an excellent accompaniment to any meal. Commonly known as 'Kondattom', it goes especially well with curd rice, sambar and many other southern Indian dishes. Try some with your next curry!

Gently warm in a pan before eating, they can also be used as an ingredient in curries or crushed as a topping.

• Lightly fry the curd chillies in oil till they sound like dry leaves in the pan & serve.
• Shredded curd chillies can also be used a topping for pizza etc. Unusual, but interesting!
• Use curd chillies in bland curries to add great flavour.
