Mild, Serves 4.

Tart and tangy dried mango with a blend of spices to create a fragrant, flavourful and easy tray bake.
 

Shopping List

• 4 tbsp veg oil
• 4 tbsp natural yoghurt
• 1 red onion cut into large chunks
• 1 courgette cut into large chunks
• 3 peppers cut into large chunks

Cooking Instructions: Serves 4

1. heat oven to 200c
2. mix oil, yoghurt and spices
3. add ingredients together and marinate for 10 minutes
4. bake in oven for 20 mins
