Deggi Mirch is a unique, age old blend, processed from special varieties of colourful Indian red chillies. It has a milder chilli flavour, which imparts a delightful natural red colour to curried dishes. Hence it is also known simply as ‘red chilli powder’.
If you want to recreate that Indian restaurant finish to your curry this is the secret ingredient, as it will also colour the oil that can rise to the top to give you that authentic look.
For best results fry chopped onions till golden. Then add chopped tomatoes and Deggi Mirch. Stir until homogenised, and it has imparted a red colour. Then proceed with your normal cooking.
If you are not using tomatoes, reduce flame and add Deggi Mirch, then once red colour has imparted proceed further.
