Yellow mustard seeds are also called 'white mustard seeds' and provide a fragrant mild flavour to many dishes including dhall curries. Milder than brown or black seeds they are usually 'popped' in ghee/oil at the beginning of cooking to gain flavour. These are also used in pickling and in making everyday mild yellow mustard.
