Pork Vindaloo

  1. heat 4 tbsp oil in a pan and add 1 finely chopped onion, fry until dark brown and soft.
  2. add 1tsp finely chopped ginger, 2 tsp finely chopped garlic, and half jar of vindaloo paste, cook for 1-2 mins, add 50ml water, cook until water has evaporated.
  3. add 500g diced pork, cook until sealed, add 250ml water, 3 tbsp tomato puree and 2 tsp sugar, cover and simmer until tender [aprox 30mins].
  4. add 1 tbsp malt vinegar, season to preference and serve with rice or naan.
