Nigerian honey beans are used extensively in Afro Caribbean cooking.
Nigerian honey beans are a variety of blackeye beans widely used in West Africa.
They are celebrated for their uniquely sweet taste and great texture. Use in soups, stews, curries, salads and as a substitute to your normal beans. Try using them in the traditional African dish 'Moyin Moyin'.
place the beans in a pot with plenty of fresh water. Boil rapidly for 45mins or until the beans are tender. If necessary add more boiling water to the simmering beans to keep them covered.
