Lye water is a potassium carbonate solution. It has many uses in food, curing and cleaning and should be used strictly according to any instructions you have to follow.
In Japan, Lye water is used in the making of traditional ramen noodles and in China for baking Moon Cakes or preparing some types of dumplings. It is commonly used to prepare vegetables as instructed on the bottle.
- fill container with 1 litre water.
- add 10 drops of lye water and stir thoroughly.
- soak washed vegetables in the solution for a few seconds and drain in strainer, then ready to cook.
- this will make vegetables tender and appear more presentable.
