Glutinous Rice (Sticky Rice)

Dragon Glutinous Rice is grown in the northern part of Thailand where the type of soil and climate are a guarantee for the high quality of this glutinous rice. Characteristics are the long peaky white grains which after cooking turn to be delicious in taste with a natural aroma.
A type of short-grained rice, glutinous rice is also called sticky rice, sweet rice, waxy rice, botan rice or mochi rice. It is especially sticky when cooked. It is called glutinous in the sense of being glue-like or sticky and not in the sense of containing gluten. It is commonly used for the popular dish sticky rice balls.
- soak the rice for 12 hours in cold water.
- put the rice in a pan and add that much water until 1cm above the rice.
- cook the rice, lower the heat and simmer for 20mins until all liquid is taken.
- remove from heat, uncover and cool down before serving.
