A popular snack of western Indian states of Maharashtra, Gujarat and Rajasthan made from chick peas flour.

  • Step1: mix oil and water
  • Step2: pour and steam
  • Step3: garnish
Recipe: 
  1. blend 30ml oil and 235ml water, pour into dhokla mix gradually, blend very gently with minimum stirring until batter is smooth.
  2. pour batter into 2 baking trays greased with oil, steam on high flame for 15mins, remove and allow to cool for 10mins then cut into 5cm cubes.
  3. heat 30ml oil and add half tsp mustard seeds, when crackling starts add pinch of asafoetida and 1 tbsp sesame seeds, then put off gas.
  4. spread evenly over dhokla, sprinkle 2tbsp each of grated coconut and chopped coriander - serve with chutney.
Ingredients: chick peas flour, semolina [wheat] flour, sugar powder, salt, raising agents [citric acid and sodium bicarbonate], asafoetida, turmeric, sodium acetate.
