Jerking is a Jamaican tradition which involves flavouring meat and fish with an exotic combination of herbs and spices.

Dunns River Jamaican jerk seasoning adds flavour to many sauces and dressings and can be mixed with natural yoghurt as a marinade for kebabs.

Directions: 

  • rub seasoning into chicken, meat or fish and leave to marinate for several hours.
  • then grill on BBQ for an authentic Jamaican flavour.
  • alternatively cook under a medium grill or bake in moderate oven.
     
Ingredients: pepper mash (west indian pepper, scotch bonnet pepper, salt), escallion mash (escallion, salt), cane vinegar, salt, pimento, onion, garlic, brown sugar, water, paprika, nutmeg, thyme, ginger, black pepper.

There is no indication to the level of heat. So beware if you want a hot one! The flavour is good though with lots of Thyme.
