Coconut flour is a great, versatile ingredient used in cooking and baking.
Recipe: Coconut Cake
- 1 egg white
- 150g caster sugar
- 75g coconut flour
- rice paper
- glace cherries
- crystallised angelica
- beat the egg white until stiff, then beat in the sugar and coconut flour.
- spoon into a cake tin and garnish with cherries and angelica.
- bake at 180c gas mark 4 for 15 mins or until it starts to brown.
- serve warm or cold.
