Black Glutinous Rice (Black Sticky Rice)
400g by NS. A popular grain of sticy rice used in oriental dishes, especially desserts. Like all rice there are a number of ways to cook it and often its best to stick with a tried and tested method your comfortable with.
Instructions: Wash the rice, soak in warm water for 1 hour and a half or soak in cool water for 9 or 10 hours. Drain water, add salt to taste and place rice in steamer to cook on low heat till done.
For Sweet Coconut Rice: 1] Place rice in bowl, cover well with water, cover bowl and leave overnight. 2] Drain, add rice to pan of boiling water, simmer uncovered for about 15mins or until tender - drain. 3] Combine rice with coconut milk & palm sugar in pan, simmer uncovered, stirring occasionally for about 15mins Or until thickened to porridge like consistency. Serve drizzled with a little coconut cream. Store in cool dry place. Measurements will be too your preference of sweetness and creaminess.
